The last few days I’ve been going through the struggle of eating Paleo, on limited time, with limited work. I’ve been winning this battle. How you ask? Do you know what Freedom Lunch is? Freedom Lunch is what we had for pre-Independence Day lunch at Samaritan’s Purse. By the way, this is what makes Samaritan’s Purse great. BBQ pork (which is just BBQ in NC), hush puppies, cole slaw, baked beans, and a strawberry popsicle. Is it considered cheating on my lifestyle (diet)? No, because I didn’t succumb to temptation, I knew that I was going to enjoy this lunch that was prepared in love specifically to celebrate the 4th of July. Cost $6 (I ordered double meat).
During days 4 and 5 I also at protein shakes, plenty of black coffee, apples, bananas, spinach, chicken, hard boiled eggs, and bacon #FTW.

Days 1 and 2 were a miss and hit. Day 1 miss, Day 2 hit. [Read more…] about Days 1 and 2
